Pressure Canning

Posted on May 15, 2010.
Pressure CanningI have a pressure cooker, can I use for canned tomatoes?

My pressure cooker does not have canning instructions in it, but it would be the difference between a real stove and the pot that would prevent me from being able to use the cooker? Am I better to just make the method of boiling water bath?

You can. But you do not need. Tomatoes are very acidic and should simply be sterilized in a water bath. Wash tomatoes and pack into sterilized jars cold (boil the lids and jars in water for 15 min). Fill each jar with water up to half an inch high. Add a little salt. Slightly put the lid on (you want the steam to escape when you boil) and put in a boiler. Add water to the boiler, but not above the jars. Bring to a boil and maintain for 20 minutes. Remove the jars using forceps bottle. Using oven mitts, tighten the lids and let cool. You hear pops as the dash covers the vacuum. The pop is normal. That's it.

I always made the water bath and it works very well. Make sure you boil long enough to get a good seal.

Using the method of water bath is my preferred option. There is a abundent glass jars that can be reused.
Canning means that you have to go buy them, and then seal.
