Peanut Noodles with Chicken (Thailand)

Ingredients

1. 2 cooked chicken breasts, thinly sliced or cubed

2. 1 / 2 cup chicken broth

3. 1 tsp tablespoons minced fresh ginger

4. 3 tablespoons soy sauce

5. 3 tablespoons crunchy peanut butter

6. 1 1 / 2 tsp tablespoon honey

7. 2 cloves garlic, minced

8. 8 ounces udon noodles (udon Substitutions are soba noodles, linguine or spaghetti, preferably whole wheat)

9. 1 / 4 cup chopped green onions


Bring a large pot of water to a boil. Add noodles and cook until tender according to the method of packing. Drain. Combine chicken broth, ginger, soy sauce, peanut butter, honey and garlic in a small saucepan. Cook over medium heat until peanut butter is melted and hot. Add noodles and chicken, toss to coat. Garnish with green onions.

Chicken Cordon Bleu
2 (8 oz) boneless chicken breast
2 slices of ham
2 slices Swiss cheese
cooking spray
2-3 tablespoons Italian-flavored bread crumbs
Make a pocket in each chicken breast. Fold a slice of cheese
each slice of ham and place one inside each chicken breast. Spray
chicken with nonstick cooking spray and coat each with bread
crumbs. Carefully place the stuffed chicken in the wells.
Bake 20 minutes. Serve topped with hollandaise sauce, bearnaise or your
favorite sauce, if desired. Serves 2.
Cheddar and Broccoli Stuffed Chicken - 3 tablespoons of substitute
chopped broccoli for ham and cheddar cheese for Swiss.
Spinach and feta stuffed chicken - 3 tablespoons substitute
chopped spinach combined with 1 teaspoon of pesto and 1 teaspoon
chopped sun-dried tomatoes for ham and feta cheese for Swiss cheese.
Stuffed Chicken Breasts
1 chicken breast boneless skinless, halved
1 cup instant stuffing mix, divided
1 / 4 cup hot water
1 tablespoon soft margarine

Meanwhile, mix 1 / 2 cup stuffing mix, hot water and margarine in a
a small bowl. Set aside. Crush the remaining stuffing mix and spread in a
plate.
Cut a pocket on the side of each piece of chicken piece, opening
butterfly. Place half the prepared stuffing on each chicken
breast and fold closed. Spray both sides of chicken with nonstick
cooking spray, roll in crushed stuffing crumbs and place one piece
chicken in each well.
Bake 15 minutes or until a meat thermometer reads 180 degrees.
Serve with hot chicken sauce, if desired. Serves 2.

Chicken Rice in Mexico.

What you need:
3-4 boneless chicken breasts, skinless, cut into bite
1 1 / 2 cup instant white rice
1 1 / 2 cups vegetable stock (substitute water if you wish)
1 packet of vapors Bird's Eye vegetables - especially seasoned southwestern corn
Virgin Olive Oil (for butter 1 tablespoon olive oil or regular if you wish)
Salt - enough to generously salt the chicken
Pepper - enough to generously salt the chicken
Mrs. Dash Southwest Chipotle - 2 tablespoons
Mrs. Dash Original mix - 2 tablespoons
Cumin - About 2 tsp Tea
(All the seasonings are to my taste. I did not even measure them. But I'll add an approximation)

Put a large pot (usually the big pot I put the pasta in) on the middle / high heat. Add 2 tablespoons extra virgin olive oil, or twice around the pot. Add chicken cut. Season with salt and pepper. Cook through. Add remaining seasoning and coat the chicken. Reduce heat to low / medium. Add rice. Toast rice with chicken for a few minutes. A.
