Cocktail Spoon

Well, I know the trick for cocktails layers fairly well, but I wonder what is the best kind of knife is to use layers revenue shooter. I use my spoons to measure, for the most part, but since the neck is about as wide as the scoop is a bit difficult to stabilize in order not to net on the board.
Are there any special tools I can use to layer more correctly? Any help would be greatly appreciated:)
