Ball Canning Cookbook

Posted on May 17, 2010.
Ball Canning CookbookWithout telling me to buy a cookbook, which can give me a simple recipe for popcorn balls?

POPCORN BALLS

5 quarts popcorn, popped
2 cups sugar
1 1 / 2 cups water
1 / 2 teaspoon salt
1 / 2 cup light corn syrup
1 cup vinegar v. Tea
1 tsp teaspoon vanilla

Keep popcorn warm and crisp in the oven (300-325 F). Butter sides of pan. In this paper, combine sugar, water, salt, corn syrup, and vinegar.
Cook to hard stage (250 F). Add vanilla. Pour slowly over hot popcorn, mixing well to coat all the kernels.

Press into balls (butter hands if necessary). Try not to burn your hands.

Here's a simple recipe I use:

Quick and Easy Popcorn Balls
From Diana Rattray,

INGREDIENTS:
corn oil aec 1 / 4 cup
aec 1 / 2 cup popcorn
aec 1 / 2 cup dark corn syrup
aec 1 / 2 cup sugar
aec 1 / 2 teaspoon salt
PREPARATION:
Heat corn oil in a 4-quart saucepan over medium heat for about 3 minutes. Add popcorn. Cover, leaving cover slightly ajar. Shake frequently over medium heat until the popping stop. Meanwhile, combine corn syrup, sugar and salt.

Add to popcorn in the boiler, stirring and tossing constantly over medium heat for 3 to 5 minutes or until sugar is dissolved and the popcorn is evenly coated with mixture. Remove from heat. Gently form into balls, using buttered hands.
Makes about 1 dozen popcorn balls.

This recipe is old, but it is delicious.

"Never Fail BALLS Popcorn"
4-6 qrts popcorn
2 C. white sugar
1 C. corn syrup
1 / 2 c.. Cream of tartar (or baking powder)
1 T. butter
1 / 2 c.. baking soda
Cook over medium heat, last 5 ingredients until sugar is melted, stirring constantly. Pour over popcorn and mix until even.

1 / 2 cup sugar
1 / 4 cup butter (recommended) or margarine
1 / 2 cup light corn syrup
1 / 4 c. salt
few drops of food coloring if desired
8 cups popcorn

Heat all ingredients except popcorn to boiling in Dutch oven over medium-high heat, stirring constantly. Bring to a boil and stir for 2 minutes, remove from heat. Stir in popcorn until well coated. Cool slightly.

The recipe says to dip hands in cold water, but I always rubbed margarine on my hands to shape into balls. I suppose that in any event would work. Good luck and have fun!
